For the eclairs, I/Emma was thinking more like a slow time in the kitchen and she's in the mood for something sweet, so she cooks up a batch for herself and her friends. She spends most of her time cooking for the inn, so something more personal, less in bulk for the bakery. If that makes sense.
Liz could ask Emma to teach her to cook. She'd probably get a more chilly reception between the large amounts of secondhand embarrassment Emma usually feels around Liz and the incident with Jag that Emma is not over. On the other hand, she probably wouldn't be directly rude without provocation, so as long as it didn't interfere with Emma needing to cook for people at meals and stuff, she would probably be wiling to teach some.
